Here is a trick a friend of mine taught me
 
Slice then dice a fresh tomato into chunks. Drizzle on some olive oil (I used infused olive oil for flavor). Nuke it for 20 to 25 seconds. Eat!

It's awesome. Like Pomodoro without the carbs....

That sounds good but I like eating fresh tomatoes at room temp. sliced up and drizzled with olive oil, black pepper and garlic salt. Sometimes I add ranch dressing. Yum! Nothing like fresh home grown tomatoes!

My wife takes an english muffin and puts a layer of mozzerella then a layer of sliced tomatoes then some grated mozzerella on top, drizzled with olive oil, and toasts it. I like it ok, but I think it is also good without the cheeze and bread.
