Scheduled Gas Release!

I had several unscheduled gas releases after eating at Trejo's yesterday.

That would be Menudo and it is a soup. This was a Burrito al Carbon with heavy onions and peppers. It caused alot of global warming!

The soup menudo is a traditional Ecuadorian & Mexican dish; a frequently spicy soup made with tripe. It is often thought of as a cure for a hangover, and is traditionally served on special occasions or with family.

In pre-revolutionary Mexico, poverty among the campesinos was chronic, and little if anything that might be prepared as food was left to waste. Usually, the best cuts of meat would go to the hacienda owners while the offal went to the peons. These leftovers consisted of organ meats, brains, head, tails, hooves, etc. As cattle and sheep are ruminants that require lengthy intestinal tracts to digest their diet of grasses and raw seeds, the stomach is one of the largest pieces of offal available from these animals.

I used to eat "gizzard gumbo" down south in Cameron Parish while duck hunting in the 70's.... I'm not much for eating organs, but duck gizzards is pretty good organs!! At least when prepared by a true cajun. LOL, I also like fried chicken livers... Fried Chicken gizzards are a little chewy for me. Necks are good, not much meat but good in a gumbo.. Are "necks" counted as organs?

I don't think necks count as an organ. However, I too enjoy fried chicken livers. To make them sound more palatable to the uneducated observer, I often refer to them as "dark meat chicken nuggets".

yes and I love it. Probably because I never made it from scratch. I always toss out the giblet bags. I might try it next year. After that, I might not want it anymore. I did make homemade gravy this year, just not with giblets...
